The Kale Salad

Get out your cutting board, play some tunes and get ready to be amazed. This salad is a sleep… seemingly basic, however it’s quite tasty and the grain in there makes it completely satiating. Mark my words, it’ll become a staple in your lunch box!


The Kale Salad


2 cups chopped romaine lettuce

2 cups chopped fresh kale

1/4 cup shaved or shredded Parmesan

1/4 cup golden raisins

1/2 cup cooked red or regular quinoa

1/4 cup slivered almonds

4 to 6 ounces diced grilled chicken or vegetarian protein (Or 2 hard-boiled eggs, shells removed, chopped – optional)

Juice of 1/2 lemon

1 tablespoon olive oil



  1. In a medium bowl, combine the romaine, kale, Parmesan, raisins, quinoa (warmed), almonds, and chicken or eggs (if using) and mix well.
  2. In a small bowl, whisk the lemon juice and olive oil.
  3. Drizzle the lemon- juice-and-oil blend over the salad to slightly coat it.
  4. Transfer to a plate and serve.
